Keto Avocado and Bacon Egg Cups


Ingredients:
• 2 large avocados
• 4 large eggs
• 4 slices of bacon
• Salt and pepper to taste
• Chopped chives or parsley for garnish (optional)

Instructions:

1.Preheat your oven to 400°F (200°C).
2.Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon into small pieces.
3.Cut the avocados in half and remove the pits. Scoop out a bit of the flesh to create a larger cavity for the egg.
4.Place the avocado halves in a baking dish, ensuring they are stable. You can use crumpled aluminum foil to help keep them upright if needed.
5.Crack an egg into each avocado half. Season with salt and pepper.
6.Bake in the oven for about 15-20 minutes, or until the egg whites are set and the yolks are cooked to your liking.
7.Remove from the oven and sprinkle with crumbled bacon and chopped chives or parsley if desired.
8.Serve immediately and enjoy your delicious keto breakfast!
